The grill was running for most of two days…Smoked meats for a 4th of July family feast. Brisket (this is Texas afterall), salmon, and sausage made up the choices…Pinto beans, slaw and potatoe salad for sides. Assorted soft drinks and wine for refreshments.
The brisket went on to smoke Friday afternoon. I pulled it off the smoke at 10:30pm, wrapped it in foil and stashed it in the frig overnight. Saturday morning early I fired up the smoker again but I stashed the brisket in the oven at 250 while I smoked the salmon at 150 for 4-5 hours. I tossed the already smoked sausage on with the salmon for the last couple of hours to warm and add a little more smoke…And we pulled it all together at about 1:30…
For the first time in years we were able to stand outside and watch the towns fireworks display at the college. We walked down to the bank of the bayou for a almost completely clear view of the display a mile or so away…Even the grandson watched as the booms became colored flowers in the sky.
